Jesus Castro is a chef inspired by Japanese cuisine since he started his culinary adventure at the age of sixteen. Mostly self taught he learned many techniques and cooking styles through books and the time he spent in Japan. As Executive Chef of SoSoBa, he makes traditional food approachable. He specializes in Yakitori, enjoys butchering, and using every piece of the animal. As a Dreamer, he faces many adversities while using his culinary skills to make his place in the world.
